Who doesn't like Enchiladas?
Some tips to this recipe:
I use 2 small baking dishes when I make this recipe. This way I can divide the recipe between the two pans, and freeze 1 pan for later good eats!
I didn't specify in the graphic, but I suggest using taco size flour tortillas, this will reduce the risk of over crowding your baking dish. Although, the larger baking dish, you can use larger tortillas.
Serve these enchiladas with things like:
Sour cream
Guacamole
Salsa
Spanish rice
Queso
etc.
