Red Enchiladas

Who doesn't like Enchiladas?

Some tips to this recipe:

• I use 2 small baking dishes when I make this recipe. This way I can divide the recipe between the two pans, and freeze 1 pan for later good eats!

• I didn't specify in the graphic, but I suggest using taco size flour tortillas, this will reduce the risk of over crowding your baking dish. Although, the larger baking dish, you can use larger tortillas.

• Serve these enchiladas with things like:

  • Sour cream

  • Guacamole

  • Salsa

  • Spanish rice

  • Queso

  • etc.
